Greek Yogurt Biscuits

Description

These protein-packed Greek yogurt biscuits are the perfect doughy biscuit recipe… but with a little more staying power! The Greek yogurt in these biscuits bumps up the amount of protein in each biscuit in a way that makes them a lot more filling and satisfying, not to mention absolutely delicious, especially when topped with a smear of butter and jelly.


Ingredients

1 cup flour (any kind — all-purpose, whole wheat and einkorn flour all work well.)
1 cup Greek yogurt
2 teaspoons baking powder
3/4 teaspoon salt

Instructions

  1. Preheat oven to 375 degrees. Top a large baking sheet with a silicone baking mat, parchment paper or spray VERY thoroughly with cooking spray. Whisk flour, salt and baking powder together in a large bowl.
  2. Fold the Greek yogurt into the flour mixture using a spatula. Slowly mix together until a sticky dough begins to form. One everything is thoroughly mixed, drop large spoonfuls of dough onto prepared baking sheet. (The dough will be sticky and that’s okay! These are drop biscuits and the dough is meant to be dropped onto the baking sheet.)
  3. Bake for 18 minutes, or until tops of biscuits begin to very lightly turn brown. (If anything, I’ll pull my biscuits out on the earlier side because I prefer them slightly under-done and doughy but go with your gut on this if you like a less doughy biscuit.)
  4. Allow biscuits to slightly cool. Enjoy warm out of the oven or cut in half and top with butter (and/or honey and jelly) and enjoy!
